Chicken.
It is the only livestock generated in Minecraft that does not take fall damage. It can lay eggs, and it's possible to make a cake with eggs, and if you throw an egg, there is a 1 in 8 chance that a baby chicken—no, a chick—spawns. There is even a 1 in 32 chance that up to 4 chicks spawn at once. Though that almost never happens.
If you give them Wheat Seeds, they can breed with each other, and in that case, they don't lay an egg, they give birth to a chick. I don't know why the historical accuracy is like this, but chickens lay eggs every 5 to 10 minutes in Minecraft time without needing to be fed wheat or anything. In theory, infinite breeding is possible with just one chicken. Because you can just collect the eggs that chicken lays and throw them to make chicks.
But the Chicken Jockey. In other words, a chicken that spawned in the form of a baby zombie riding it is different. If you kill this chicken, it drops the same items as a normal chicken, but it doesn't lay eggs and despawns if the player is not nearby.
The reason is as follows.
A very long time ago. A long, long time ago. When the version of Minecraft wasn't that high, a Chicken Jockey spawned in a cave. Even up until then, the baby zombie that made up the Chicken Jockey was classified as a monster, but the chicken was classified as livestock.
This meant that when the player moved away, the baby zombie riding the chicken would despawn, but the chicken would not. The chicken left alone in the cave would lay eggs when the player got close. At the same time, zombies would also be summoned in the cave. Zombies would despawn when the player moved away because they were monsters, but there was a way to prevent despawning.
If you named a zombie using a name tag, or if a zombie picked up an item dropped on the ground, that zombie would never despawn.

The chicken that a Chicken Jockey is riding does not lay eggs. The chicken that a Chicken Jockey is riding despawns when the player moves away.
